I’d expect nothing less than slow sugary lyrics on a track named Molasses. Raekwon, Rick Ross, and Ghostface Killah may indeed flow slow, but the lyrics are far from sugary. This song from Raekwon’s Sholin vs. Wu-Tang album made me wonder what I could do with molasses, an ingredient I rarely use, that wasn’t too sweet. I opted for a molasses infused zucchini bread.
– 2 cups flour
– 1 tsp. salt
– 1/2 tsp. baking soda
– 3/4 tsp. baking powder
– 1 egg
– 2/3 cup grated zucchini
– 1/2 cup dark molasses
– 1/3 cup sugar
– 3 tbp. melted butter
– 1/2 cup chopped nuts for top garnish (I personally like pistachios)
– 1/2 cup dark chocolate chips (optional)
Grease and flour a 9x5x3 bread pan. Pre-heat oven to 350 degrees. Sift together flour, baking powder, salt, and baking powder. In a separate bowl, combine egg, molasses, sugar, butter. Alternately add flour mixture and buttermilk to egg/sugar mixture then stir. Add ingredients slowly over 3 to 4 additions. Mix well after each addition. If using dark chocolate chips stir them in now. Pour batter into prepared pan. If using, sprinkle nuts on top of the loaf. Bake for 50 minutes or until loaf test done with a toothpick. Remove from pan and cool on baking rack. Very good with butter or cream cheese!
